Muxagata... little village, cradle of this project, is located in the heart of the sub region of Douro Superior, state of Vila Nova de Foz C
The Centenary Olive grove is maintained in an Organic Farming procedure, without the application on any chemical products, from which we’ve received the Organic Farming Certificate.
The Olives are harvested manually, respecting the traditional framing procedures, between the end of October and mid November. They are processed in the same day by mechanical means at low temperatures.
The first quarter of the year has been characterized by an extremely hot and dry weather, on which the average temperature was about 10,02ºC, and the total Pluviosity was about 39mm. 2017 summer was the 6º most hot since 2000 (and the 9º hotter since 1931). Until the beginning of the harvest season, the verified average temperatures were around 18,59ºC, and the total pluviosity level was 101mm.
As consequence, we’ve verified severe thermal, luminous and hydrical stress, which affected the natural grow of leafs, causing a heterogeneous maturation.
However, due to the knowledge passed by our ancestors, and to the detailed contact with the Olive grove, we were able to prevent these risks, ensuring the production and high quality standards.
Situated in the sub-region of Douro Superior, in an average altitude of 300 metres where the climate conditions are unique, from which we emphasise the very high thermical range between summer and winter and the low humidity, the vineyards are characterized by the transversality of their ages, from two years old until more than thirty years old.
The grapes chosen to make this wine, came from the fine selection of certain parcels of the vines, and were handpicked to 25kg cases. Than they’ve passed by a carefully selection, so the best ones could be properly destemmed, crushed and placed on a stainless steel vat, were the alcoholic fermentation has occurred, with controlled temperature and manual remontage.
This wine aged during 6 month in 2nd and 3rd year French Allier Oak barriques.

The grapes, which came from our oldest vineyards, were foot trodden in traditional lagares, after which we passed them to stainless steel vats in order to make the alcoholic fermentation, with controlled temperature and manual remontage.
