CONCEPT
The basic idea of ??this wine is based on respect for the ancient viticulture of Bairrada, typically medieval root and without the use of synthetic pesticides, and in winemaking practiced by the grandfather of the current owner, of a minimalist nature and made in clay amphora.
VARIETIES
Taking into account the almost centennial age of the vineyard, the wine is made with grapes from many varieties, red and white, with the following being dominant: Maria Gomes, Bical, Cercial, Bastardo and Rabo de Ovelha, in white, and Baga, Trincadeira, Touriga Nacional and Tinta Roriz, don't forget.
VITICULTURAL YEAR
It was a good wine year in Bairrada, without extreme weather phenomena. To the water reserves were sufficient, making life easier for the vines. The hot days of end of August were important to accelerate the maturation of the grapes. September and October were not very hot or rainy, allowing us to obtain healthy grapes, balanced and with quality. Production was slightly below average.
PRODUCTION TECHNOLOGY
Destemmed grapes, crushed and placed in clay pots, previously caught with pine resin and beeswax. A “tub foot” was added, prepared in advance with healthy and well-ripe grapes, to stimulate the start of the fermentation, which began after 36 h. After the masses rise to the surface they were dipped, with a cock's foot, twice a day. when fermentation finished, after 15 days, the blanket was allowed to settle at the bottom of the pot and removed. if the seeds that appeared on the surface.
In December, the wine was removed from the amphora, through the tap at the bottom, to another amphora, coming out quite clean. The amphora was closed with a wooden lid and a minimum dose of sulfur solution was added to avoid oxidation and the formation of flower.
When the wine was clean, around Easter, it was bottled without resorting to gluing or filtration.

TASTING NOTE
Light ruby ??wine, in popular slang called “palheto”, slightly powdered, as it does not have undergone gluing or filtration. Discreet aroma, with youthfulness, where you can also notice the fruit. In the mouth, the striking acidity, astringency and rusticity, characteristic of winemaking style.
SKILLS
Wine to drink now, as was done in the past in the rural world. However, if
is kept in a cool place, it can evolve very well in the bottle, given its
excellent acidity and balance with alcohol.

Taking into account its rusticity, it is a popular wine, suitable to shine at the table of the meal with rural food. Roasted sardines, cod with grains or

AMPHORA WINES BAIRRADA
This wine is intended as a tribute to the Bairrada winemaking tradition and to my grandfather, a master of the art of clay, who made wine in talhas for much of his life in Aguada de Baixo.
The grapes used in this wine came from a vineyard with nearly century-old vines of many varieties, both white and red, which I strive to cultivate in a minimalist way and in keeping with the ancient Bairrada tradition. The vines are pruned according to their vigor, and the canes are tied with wicker, using various wrapping processes, such as Rabo de Leão, Morcela, and Amouroada.
Weeds are controlled without the use of herbicides. The main varieties are: Maria Gomes, Bical, Cercial, Bastardo, Baga, Rabo de Ovelha, Trincadeira, Touriga Nacional, and Tinta Roriz.
Winery Malápio, where we revive the medieval tradition of winemaking in clay jars with fermentation to produce natural, minimally invasive, and authentic wines from the Bairrada region. Here, we provide luxury wine tourism services with unique features, a centuries-old winery, and a medieval vineyard.
The goal of internationalizing the Malápio brand is to provide a high-quality product with regional excellence from Bairrada (Portugal) to markets that consume and appreciate natural wine.
To internationalize Bairrada's talha wine in markets that value natural products, with minimal intervention, and following best practices for sustainability/artisanal production.
Promote Portuguese wine in markets with import potential.
